Arnaud Faye, the talented Executive Chef at the new Auberge du Jeu de Paume, rose to acclaim working with the biggest names in the trade: Michel Roth at the Ritz, Thierry Marx at the Mandarin Oriental, and at the Relais Bernard Loiseau. His passion and know-how also earned him a top-place finish in the 2010 Création et Saveurs competition.
In times gone by, the Château de Chantilly played host to kings and princes, who came to enjoy the remarkable setting and savour the finest culinary creations of the age. So it is quite natural for the Auberge du Jeu de Paume, Relais & Châteaux, to keep the flame of this tradition burning with its gourmet restaurant, Michelin starred La Table du Connétable, whose large windows look directly out onto the Château gardens, Le Nôtre’s masterpiece. The atmosphere is one of quiet elegance: the chevron parquet flooring is scattered with sumptuous rugs, the armchairs are in the Louis XVI style, the colours a camaieu of beige and burgundy. The large studio windows hint at the remarkable culinary works of art being prepared.
In the expert hands of Arnaud Faye our executive chef in luxurious, comfortable surroundings, guests will savour a cuisine that is creative, combining tradition and new ideas, innovative interpretations of traditional recipes and signature dishes, the entire experience heightened by the talent of the sommelier.
We are happy to announce that our fine dining restaurant, "La Table du Connétable" and our Chef, Arnaud Faye, have just been awarded with one Michelin star for 2013.
