Meet the Chef

Arnaud Faye, the talented Michelin Starred Executive Chef at the new Auberge du Jeu de Paume, Relais & Châteaux, rose to acclaim working with the biggest names in the trade: Michel Roth at the Ritz, Thierry Marx at the Mandarin Oriental, and at the Relais Bernard Loiseau. His passion and know-how also earned him a top-place finish in the 2010 Création et Saveurs competition and one Michelin star in 2013 and now two Michelin stars in 2014.

At the Auberge’s gourmet restaurant, Michelin Starred La Table du Connétable, Arnaud Faye serves up a mix of innovative ideas and revamped classics, celebrating terroir ingredients and traditional know-how while also treating guests to new tastes in signature dishes like lobster Thermidor, Adour salmon façon Bearnaise, and crispy ravioli stuffed with green peas and hyssop-scented chanterelles.

The Jardin d'hiver will offer simple, authentic fare in a relaxed, welcoming setting. Aroma and flavour take centre stage in Mr Faye’s teardrop tomatoes à la burrata, crème de brocoli lemon bergamote, squid, shrimp, or roasted sea bream and fennel, which on nice days can be enjoyed in the alfresco calm of the restaurant’s elegantly landscaped and furnished patio. Chantilly is famous for its cream, for François Vatel and for the sumptuous feasts held there in honour of Louis XIV and other historical figures. The Auberge du Jeu de Paume has recruited its star chef to promote the city’s illustrious past and make it a focal point of gourmet French cuisine, a location for exceptional banquets and receptions that will impress guests of the hotel and headline events.
